I was so tempted to eat snacks these few days and decided to make some healthy cookies instead!
As I have a huge box of Uncle Toby's Oats lying at the bottom of my shelf, I decided to make a good use of it.
It took me a long time to finish baking as my oven did not have a baking tray. Instead, I got to use my cake tray and tart tray to bake many small batches.
The cookies recipe is adapted from: Oatmeal Cookies.
I just fell in love with Joy of Baking. The blogger, Stephanie, actually included an introduction to all the recipes she had on the website. And this website has been bookmarked into my special "Dessert" folder.
I changed the recipe slightly as I wanted to use my Wholemeal Self-raising flour. So instead of adding All-purpose flour, salt and baking soda, I added the wholemeal self-raising flour.
INGREDIENTS:
- 170g unsalted butter, room temperature
- 1 cup of packed light brown sugar
- 1 large egg
- 1 tsp of vanilla extract
- 3/4 cup of wholemeal self-raising flour
- 1/2 tsp of cinnamon
- 3 cups of rolled oats
- 1 cup of cranberries, cherries or raisins
- 1 cup of walnut/pecans, toasted and chopped (optional)
METHODS:
1. Preheat the oven to 350F/ 177 degC and line the baking trays with baking sheets.
2. In bowl of electric mixer/ hand mixer, beat the butter and the brown sugar until creamy and smooth (about 2-3 min).
3. Add egg and vanilla extract and beat to combine.
4. Add flour and cinnamon to creamed mixture and beat until incorporated.
5. Stir in the nuts (if you have ), oats and dried cranberries.
6. Make small balls of dough and space the cookies about 2 inches apart on baking sheet. Flatten the cookies about 1/2 inch thick. Bake the cookies for about 10-15 minutes. (I baked it for 10 min) or until light golden brown around edges.
7. Remove from the oven and cool a few minutes on the baking sheet before storing/eating.

I finished my yoghurt that day and was pretty reluctant to throw away the container.
I was glad I did not recycled it.
Now i have something to store my cookies with! :)
After I was done with all the cleaning up and stuff, I could not resist eating them and hence got into a cookie-comatose after nom-ming 8 pieces of them.
